Easy Chicken Stir Fry Recipe

I cook a lot of Asian inspired meals!!


Asian Style one skillet. HEALTHY! And so simple!

Easy to adjust for serving size: Serves 3-4
In a large skillet with 1 tbsp. of coconut oil, stir fry 2 cut up chicken breasts until Browned lightly.
Add any chopped vegetables you like. I use celery, onion, sugar snap peas, frozen green beans, and red and green peppers.
Add 1 tsp. chopped ginger, 2 cups of chicken broth, and 2 Tbls. soy sauce.
Rinse 1/2 package of rice stick noodles on the top. Cover and cook until noodles are done. Stir once the noodles begin to soften. You have to watch it because you may have to add more broth or water and soy sauce to taste.
For low carb just use less broth and no noodles.

Pork Enchiladas with Red Sauce

Crock Pot Pork Enchilada

Put pork in the slow cooker on low for about 7 hours with a can of enchilada sauce (spiciness to your preference)
Pull out pork with a slotted spoon and shred with a cake mixer for fast shredding
Heat up tortillas and fill with meat and a little bit of juice (you can add rice, beans, onions, etc to your liking), roll burrito and place on oven safe dish, add more juice and shredded cheese, bake until melted, add more juice if desired.
Serve with Rice, beans, chips, salsa. Enjoy!

Moist Carrot Cake from Scratch

Kitchen Chaos Carrot Cake 

(With Cream Cheese Icing)
Ingredients:
2 cups sugar
1 1/4 cup vegetable oil
4 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon ground cinnamon
1 teaspoon baking soda
2 teaspoons baking powder
3 cups finely grated carrots
Directions: Turn the oven on to 350 degrees. Now, grab a large bowl, blend together the sugar and oil. Make sure to blend well, before adding in the eggs and vanilla.
In a separate bowl, mix together the dry ingredients and then fold into the first bowl. Then stir in the carrots. Pour the batter into a greased 9x13-inch baking pan and bake for about 50 minutes to an hour or until toothpick comes out clean.
Cream Cheese Icing
1/4 cup cream cheese, softened
1/4 cup butter, softened
1/2 tsp vanilla
1-1/2 cups icing sugar
In bowl, blend the cream cheese and butter add vanilla. Blend in the sugar in two parts and mix until smooth.

Tana’s Kale Salad

Quantities depend on your liking of the ingredients

½ bunch of kale chopped and cut into small pieces
1 small bag of broccoli slaw
I bell pepper (I use red for color)
½ bag of fresh sweet peas (I use one from the garden but you can buy them)
½ medium red onion cut into fine pieces
5 or 6 broussell sprouts cut in half and sliced
1 can mandarin oranges
½ cup each raw pumpkin seeds, sunflower seeds
Handful of raisins and/or dried cranberries
Poppyseed or three cheese ranch dressing


You can add whatever other vegetables you like, sometimes I put cucumbers and carrot sticks too. This salad lasts up to 3 days with the dressing mixed in and it is still crunchy!!!!

Stuffed Sweet Potatoes
Ingredients:
4 Medium/Large Sweet Potatoes (washed thoroughly)
6 oz Canadian Bacon (Divided and Chopped)
4 Tbs Sour Cream ( I used Daisy Brand)
6 tsp Finely sliced Scallions
4 Tbs of Shredded Cheddar Cheese

Directions:
Wash Sweet Potatoes and pierce with fork
Place on Microwave safe plate or paper towels in microwave.
(they also may be cooked in oven time will vary)
Cook on High for 10 minutes turning after 5 minutes.
Let cool a few minutes and slice potatoes length wise.
Pre Heat oven to 325°
Scoop out inside of potatoes in a separate bowl leaving 1/4 inch shell.
Mash Sweet potatoes and and Canadian Bacon and Sour Cream mix well.
Spoon mixture into Shells ,place in Baking dish… top with Shredded cheese and Scallions Bake at 325° for 20 minutes (uncovered)

I just used Lavender when Olivia was so sick! Lavender, peppermint were cure alls!!
1- Potpourri
Add a few drops of oil to your potpourri, dry or silk flowers (NOT on wood furniture!!)
2- Bath
For aching muscles or stress relief, add 4 drops of oil to your bath. You can also add a handful of Epsom salts.
Sit back, relax and soak away your tensions!!
3- Cuts/ Scrapes
Spray on lightly some Lavender oil on the affected area. It’s a great disinfectant that will not “kill” the “good bacteria”
on the skin!!
4- Fatigue
Add 5-8 drops of oil in a hot foot bath to soak your feet (which are particularly porous, so it reaches your bloodstream
quickly, soothing various systems of your body!!)
5- Insomnia
A few drops or a light “squirt” on your pillow case for a sweet sleep! (I’ve personally done this too, by adding a little
pouch of lavender “buds” inside my pillow case…works great!!) For babies, add 3 drops of lavender oil in their bedtime
bath water.
6- Disinfectant
To sterilize household surfaces, add 10 drops of lavender oil to a small squirt bottle (can be found at the Dollar Store).
Spray on surface, wait 30 minutes. Not necessary to wipe off. (NOTE: NOT to be used on wood furniture or wood surfaces to
be safe!) You can use it to disinfect toilets, sink handles, telephone receivers, light switches, etc…
7- Burns
After cooling the burn under cold, running water for approx. 5-10 mins (or more), gently apply oil to affected area.
This should help lessen the pain immediately.
8- Headache
Massage a few drops of lavender oil into your forehead, your temples, nape of neck, and the inside of your wrists.
9- Acne
Apply 1 drop of oil on the affected area (pimple) inhibits the bacteria that causes the infection & helps re balance the
over secretion of sebum.
10- Insect Bites
Applying 1 drop of lavender oil on an insect bite will soothe itching and inflammation. Dab on as soon as possible.
11- Moths
Hang little fabric bags or pouches (can be found at the Dollar Store, if you cannot find a substitute at home) amongst
your woolens in your closet, and refresh with oil from time to time. It’s a deterrent, but not a guarantee!
12- Fungus
T.V.’s Dr Oz says that lavender oil (3 drops), when rubbed into the finger or toe nail (several times a day) has anti-fungal properties! (Re-apply after washing your hands or bathing)
NOTE: Store your oil AWAY from heat & light to preserve its properties.

Pear and Cranberry Chopped Salad



Autumn Chopped Salad


Ingredients

6 to 8 cups chopped romaine lettuce

2 medium pears, chopped

1 cup dried cranberries

1 cup chopped pecans

8 slices thick-cut bacon, crisp-cooked and crumbled

4 to 6 oz. feta cheese, crumbled

Poppy seed Salad Dressing

Balsamic Vinaigrette (I like Newman's Own Light Balsamic Vinaigrette)

Procedure:

On a large platter, combine the lettuce, pears, cranberries, pecans, bacon and feta cheese. Drizzle generously with poppy seed dressing, followed by some of the balsamic vinaigrette. (I would estimate that I used about a cup of dressing: 70 percent poppy seed dressing and 30 percent balsamic vinaigrette) If you prefer your salad to have more dressing, feel free to experiment with the combination.

Praline and Pecan Cake

Another Southern delight here is pecans and pralines. This is a perfect cake for all the praline and pecan lovers out there.

For Southern Pecan Praline Icing:

3/4 cup butter or margarine
1 cup Granulated Sugar
1/2 cup Light Brown Sugar, firmly packed
4 large eggs of yolk
1 large can (12 oz.) evaporated milk
2 tsp. vanilla extract
2 cups chopped pecans

Melt the butter or margarine in a large saucepan over medium heat. Remove from heat, then stir in Granulated Sugar and Imperial Light Brown Sugar. (Sugars will not dissolve). In a separate bowl, whisk the egg yolks with the evaporated milk until smooth, then whisk this mixture into the saucepan with the sugar mixture. Return saucepan to a medium heat setting and cook, whisking constantly, until mixture is thick, shiny and caramel-like, about fifteen to twenty minutes. Remove from heat and stir in vanilla extract and pecans. Cool icing to a good spreading consistency (about thirty minutes), then spread evenly between cooled cake layers and over the top and sides of the cake. Recipe yields icing for a nine-inch, three-layer cake.

For The Cake:

1 cup butter or margarine, softened shopping list
1-1/2 cups Granulated sugar shopping list
1 cup Light brown sugar, firmly packed shopping list
4 large eggs shopping list
3 cups all-purpose flour shopping list
1-1/2 tsp. baking powder shopping list
1/4 tsp. baking soda shopping list
1/2 tsp. salt shopping list
1 cup milk shopping list
2 tsp. vanilla extract

Grease and flour three nine-inch round cake pans and preheat oven to 350°F. Cream the butter or margarine with both Granulated sugar and light brown sugar until very light and fluffy, then add the eggs, one at a time, beating well after each addition. Sift the flour with the baking powder, baking soda and salt and add to the batter alternately with the milk, beginning and ending with the dry mixture. Stir in the vanilla extract. Divide batter evenly among the prepared pans and bake in the center of the preheated oven for twenty-five to thirty minutes or until a wooden pick inserted in the center of the layers comes out clean. Cool layers in their pans over a rack for ten minutes, then loosen and turn out layers directly onto racks for cooling. Cool layers thoroughly before icing

These are a very moist low fat chocolate brownie alternative, for weight watchers, only 2 ww points per serving (24 servings).

1/2 Cup applesauce
2 small to medium bananas mashed
1 1/2 cup sugar
2 tsp vanilla extract
1/2 Cup cocoa powder
1 1/2 tsp baking soda
1/2 tsp salt
2 Cup finely shredded zucchini ( I use a grater)
2 Cups all purpose flour
1/2 Cup walnut pieces
Directions:
Preheat oven to 350 degrees F. Grease and flour an 9 x 13 inch baking pan. In a large bowl, mix together the applesauce, mashed bananas and sugar. Add vanilla and cocoa and mix together. Then add baking soda, salt and zucchini and mix together. Add flour and walnuts and mix together. Spread evenly into the prepared pan. Bake for 25 mins until brownies spring back when gently touched.

Bacon Breakfast Hash

Ingredients
4 cups cooked and diced potatoes.
1 lb bacon
2 TBS reserved bacon grease
1/2 cup cheese
10-14 eggs
1/ 4 cup milk
S&P to taste
Directions
Fry bacon crisp and drain on a paper towel. Remove all of the grease except for 2 TBS. Fry the diced potatoes in same pan with the reserved bacon grease til slightly crispy on the edges.
Meanwhile in a medium bowl beat the eggs, milk and salt & pepper. (Go easy on the salt as the bacon is typically already salty).
Crumble bacon over the potatoes and then pour eggs over the top. Scramble the eggs in the potato bacon mixture until eggs are cooked through. Turn heat off.
Sprinkle the cheese over the top of the eggs and potatoes and cover with a lid until cheese is melted.
Enjoy!

2 tablespoons rolled oats

Makes about 8 to 10 pancakes
You will need:
1 1/4 cups of all purpose flour
2 tbsp of sugar
2 tsp of baking powder
1tsp cinnamon
1/2tsp ground ginger
1/2 tsp sale
1/8 tsp nutmeg
Pinch of ground gloves
1 cup of milk
6 tbsp. of pumpkin puree
2 tbsp of melted butter
1 egg
Here is what you do:
Whisk all dry ingredients together.. then in another bowl melt your butter, add egg and pumpkin.. mix well... then fold into dry ingredients...
Cook for about 3 min. each side...

Ingredients
4 cups very finely shredded cabbage (I use my mandolin slicer)
1/4 cup of finely chopped carrot
1 tbsp sugar
1/4 cup mayonnaise
2 tbsp Apple Cider Vinegar (you can also use white vinegar and/or lemon juice)
2-3 tbsp milk
1/4 tsp celery salt
Salt and pepper to taste
Combine the ingredients and refrigerate at least 2 hours before serving. Stir before serving.

1 head fresh cauliflower, chopped
1/2 cup chopped red pepper

1/2 red onion, chopped

1 cup reduced fat sharp cheddar cheese, shredded
1 cup reduced-fat ranch dressing

Instructions
Mix all ingredients together in a large bowl and toss with reduced fat ranch dressing.

Easy Homemade Playdough

Easy Homemade Playdough

This is the best, softest playdough I have ever made! And the kiddos love it too!!!
What you’ll need:
1 cup flour
1 cup water
2 teaspoons cream of tartar
1/3 cup salt
1 tablespoon vegetable oil
food coloring

Mix together all the ingredients, except the food coloring, in a saucepan. Cook over low/medium heat, stirring. Continue stirring until the mixture is much thicker and begins to gather around the spoon.
Remove the dough onto wax paper, add desired food coloring and mix till thoroughly blended. Let cool and play

Sweet, but still low calorie! Only 64 calories per serving!
Ingredients:

Soup can size-Mandarin Oranges (drained)
Shredded carrots
Apple (3, chopped)
Feta cheese crumbles (1 pkg)
Dried cranberries (1 pkg)
Almonds (I used slivered)
Lettuce (I use spinach)
Raspberry vinaigrette
Red Onions

Instructions:

Add all ingredients in a bowl and toss (or shake with the lid on) Serve. All the quantities of ingredient are to your taste!

Oven Fried Chicken

I am making this tonight!!

{Baked Fried Chicken}
I am pretty sure someone has discovered the KFC secret recipe! It is DEAD ON! It is also baked...not fried and there isn't any skin! So you get to enjoy the taste of the seasoning, instead of pulling it off because of the slimy skin!

This is super easy and you are TOTALLY going to love it!
Place thawed chicken breast tenderloin strips in a bowl of milk. Let soak for 20-30 min.
Mix in a Gallon Size Ziploc or Large Bowl:
1/2 tsp. Salt
1 T Season All
3/4 tsp Pepper
1 c. Flour
2 tsp. Paprika

Preheat oven to 400 degrees. Cut 1/2 stick of butter into a few pieces and place in a 9x13 pan. Melt butter in pre-heated oven.

Spread melted butter around the bottom of the pan. Lightly spray the pan, if needed, to make sure that there are no dry spots.

Shake excess milk off of chicken and completely coat each piece with the seasoning mix. You can either shake the chicken in the bag, until coated, or dip each piece in the bowl until coated.
Place each piece of chicken in the pan.

Cook for 20 min. Turn each piece of chicken and continue cooking for 20 more minutes, or until cooked through.

Cream Cheese Banana Nut Bread **Very Moist**

Ingredients:
3/4 C. Butter, softened
8 oz. pkg. cream cheese, softened
2 C .Sugar
2 large eggs
3 C. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 C. mashed bananas (about 4 bananas)
1 C. Chopped Nuts
1/2 tsp. Vanilla

Directions:

Beat butter and cream cheese until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time. Combine flour and next three ingredients. Gradually add to butter mixture; beating on low just until blended. Stir in bananas, nuts and vanilla. Spoon batter into 2 greased loaf pans. Bake at 350 degrees for about 1 hour or until a wooden pick inserted in center comes out clean. Cool before slicing, if possible! Enjoy!

4 - 5 oz tilapia filets
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp chili powder
2 tsp parmesan cheese

Instructions
1.Preheat grill to medium heat, and place a fish mesh grilling basket on grill or a layer of foil over grill grates to cook fish on
2.In a small bowl combine salt, pepper, garlic powder and chili powder
3.Sprinkle seasoning evenly over fish on both sides
4.Place in grill basket or on foil
5.Cook fish for 3-4 minutes and then carefully flip fish
6.Sprinkle parmesan cheese over each filet and close lid of grill and continue cooking for an additional 3-4 minutes or until fish is cooked through, and flaky
7.Remove from grill and serve immediately
8.ENJOY!!

Grand Omelette Puffs

Grand Omelet Puffs

12 eggs
1/2 c milk
1/2 c sausage or bacon (cooked & crumbled)
1 c shredded chedder cheese
8 large size biscuits (Grands)
1/2 c veggies of choice (optional)
Line a large size muffin cup pan with a biscuit by putting into cup and and
pressing down and up on the sides.
Whip eggs and milk together. Add remaining ingredients, mixing well.
Pour egg mixture into biscuit shell.
Bake at 350* for 25 min or until golden brown and center of puff is done.

Looking forward to fall!! We love pumpkin pie year round! So here is what I do.
STORE that PUMPKIN in the FREEZER
Aside from the obvious use in pumpkin pie, it comes in handy for pumpkin bread, pumpkin muffins, pumpkin dip .. pumpkin smoothies… you get the idea...
I use small to medium pumpkins
*cut the tops off... then cut them in half.. and then in quarters
*clean the insides... KEEP the seeds cause you are gonna want to roast those...
*place on a cookie sheet rind side up bake in the oven at 350 for 45 to 60 min... check every so often cause when the fork goes through easily they are done.
*let cool just a bit.. then peel the rind off use a spoon and scoop it or a knife and remove from the back.. which ever you are comfortable with.
*Cut into chunks and place in a food processor or blender.. If pumpkin is dry add a tablespoon or two of water... process till smooth and all strings and pumpkin pieces are gone..
*I place mine in freezer baggies I put 2 cups in each one...

Ok here goes... here is my 90 day challenge pictures I'm supper proud of my self and really happy to of found Skinny Fiber!!
I've lost 29 lbs and over 20 inches!!! Everyday i get closer and closer to my goal. Ill admit i still don't eat like i should but in spurts its healthy that's only on good days lol.. i drink water most of the time its half my body weight in ounces but i still get days where I have been drinking soda that's normally when i skip my skinny fiber for a cpl days which I'v been doing quiet frequently i know I'm a bad girl but hey who is perfect?

DIY Lemon Poppyseed Massaging Soap


Super easy to make and give as gifts! This is a cheaper method that anyone can do!

You need:

Soap Base: http://tinyurl.com/k92xv84

Poppy seeds
Soap Molds in your desired shape(s)

Place soap base in a microwave safe dish and microwave in 30 second intervals until melted. Remove and let cool to about 150°F (I didn't let mine cool and that is why the poppy seeds sank to the bottom of the mold). Add 2-3 drops of fragrance and stir in poppy seeds. Pour in to molds and refrigerate until set...about 45 minutes. Remove from molds and wrap in plastic wrap. Tie decorative ribbon or raffia around the stacked bars to give as a gift!

No Bake Energy Balls





1 cup (dry) oatmeal
1/2 cup chocolate chips (or raisins)
1/2 cup peanut butter (I used almond butter)
1/2 cup ground flaxseed
1/3 cup honey
1 tsp. vanilla
(Fresh granola, optional)

Mix ingredients together in a large bowl. Roll into bite size balls. Refrigerate to set. Enjoy!!

Homemade Taco Seasoning

Homemade Taco Seasoning!!



INGREDIENTS->
1 tablespoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

DIRECTIONS->
Mix all ingredients together. Store in an airtight container until ready to use. you can easily double this recipe to make more.

When you are ready to use use your Homemade Taco Seasoning, use about 2 tablespoons per 1 pound of meat. Feel free to add more or use less.

Brown your beef then drain off fat. Sprinkle seasoning evenly over meat and add 1/3 cup of water, mix in. Simmer until water is adsorbed. 
(makes about 3 Tablespoons)

Pesto Pasta

Pesto Pasta
Lots of fresh basil from the farm today! Pesto here we come!


Ingredients:
1 lb. noodles
3/4 cup fresh basil leaves
1/4 cup pine nuts
1 clove garlic,
1 tbsp grated parmesan cheese (I used fresh)
1/4 cup olive oil
salt and pepper to taste.
Directions:
Add the basil leaves, pine nuts, peeled garlic, and grated parmesan to a food processor and blend together. Slowly pour the olive oil in while mixing. Stir in the salt and pepper.
Heat some olive oil in a pan on medium heat for 3 minutes, then add your basil mixture, and cook for 3 more minutes. Serve with extra pine nuts and parmesan cheese sprinkled on top. Or you could serve over cold noodles.

Mix all together and chill for an hour then serve!

25 HOUSEHOLD TIPS!!!



1. Take your bananas apart when you get home from the store. If you leave them connected at the stem, they ripen faster.

2. Store your opened chunks of cheese in aluminum foil. It will stay fresh much longer and not mold!

3. Peppers with 3 bumps on the bottom are sweeter and better for eating. Peppers with 4 bumps on the bottom are firmer and better for cooking.

4. Add a teaspoon of water when frying ground beef. It will help pull the grease away from the meat while cooking.

5. To really make scrambled eggs or omelets rich add a couple of spoonfuls of sour cream, cream cheese, or heavy cream in and then beat them up.

6. For a cool brownie treat, make brownies as directed. Melt Andes mints in double broiler and pour over warm brownies. Let set for a wonderful minty frosting.

7. Add garlic immediately to a recipe if you want a light taste of garlic and at the end of the recipe if your want a stronger taste of garlic.

8. Leftover snickers bars from Halloween make a delicious dessert. Simply chop them up with the food chopper. Peel, core and slice a few apples. Place them in a baking dish and sprinkle the chopped candy bars over the apples. Bake at 350 for 15 minutes!!! Serve alone or with vanilla ice cream. Yummm!

9. Reheat Pizza
Heat up leftover pizza in a nonstick skillet on top of the stove, set heat to med-low and heat till warm. This keeps the crust crispy. No soggy micro pizza. I saw this on the cooking channel and it really works.

10. Easy Deviled Eggs
Put cooked egg yolks in a zip lock bag. Seal, mash till they are all broken up. Add remainder of ingredients, reseal, keep mashing it up mixing thoroughly, cut the tip of the baggy, squeeze mixture into egg. Just throw bag away when done easy clean up.

11. Expanding Frosting
When you buy a container of cake frosting from the store, whip it with your mixer for a few minutes. You can double it in size. You get to frost more cake/cupcakes with the same amount. You also eat less sugar and calories per serving.

12. Reheating refrigerated bread
To warm biscuits, pancakes, or muffins that were refrigerated, place them in a microwave with a cup of water. The increased moisture will keep the food moist and help it reheat faster.

13. Newspaper weeds away
Start putting in your plants, work the nutrients in your soil. Wet newspapers, put layers around the plants overlapping as you go. Cover with mulch and forget about weeds. Weeds will get through some gardening plastic they will not get through wet newspapers.

14. Broken Glass
Use a wet cotton ball or Q-tip to pick up the small shards of glass you can't see easily.

15. No More Mosquitoes
Place a dryer sheet in your pocket. It will keep the mosquitoes away.

16. Squirrel Away!
To keep squirrels from eating your plants, sprinkle your plants with cayenne pepper. The cayenne pepper doesn't hurt the plant and the squirrels won't come near it.

To get something out of a heat register or under the fridge add an empty paper towel roll or empty gift wrap roll to your vacuum. It can be bent or flattened to get in narrow openings.

Pin a small safety pin to the seam of your slip and you will not have a clingy skirt or dress. Same thing works with slacks that cling when wearing panty hose. Place pin in seam of slacks and ... guess what! ... static is gone.

19. Measuring Cups
Before you pour sticky substances into a measuring cup, fill with hot water. Dump out the hot water, but don't dry cup. Next, add your ingredient, such as peanut butter, and watch how easily it comes right out. (Or spray the measuring cup or spoon with Pam before using)

20. Foggy Windshield?
Hate foggy windshields? Buy a chalkboard eraser and keep it in the glove box of your car When the windows fog, rub with the eraser! Works better than a cloth!

21. Re-opening envelopes
If you seal an envelope and then realize you forgot to include something inside, just place your sealed envelope in the freezer for an hour or two. Viola! It unseals easily.

22. Conditioner
Use your hair conditioner to shave your legs. It's cheaper than shaving cream and leaves your legs really smooth. It's also a great way to use up the conditioner you bought but didn't like when you tried it in your hair.

23. Goodbye Fruit Flies
To get rid of pesky fruit flies, take a small glass, fill it 1/2' with Apple Cider Vinegar and 2 drops of dish washing liquid; mix well. You will find those flies drawn to the cup and gone forever!

24. Get Rid of Ants
Put small piles of cornmeal where you see ants. They eat it, take it 'home,' can't digest it so it kills them. It may take a week or so, especially if it rains, but it works and you don't have the worry about pets or small children being harmed!

25. Dryer Filter
Even if you are very diligent about cleaning the lint filter in your dryer it still may be causing you a problem. If you use dryer sheets a waxy build up could be accumulating on the filter causing your dryer to over heat. The solution to this is to clean your filter with with a toothbrush and hot soapy water every 6 months.

Fried Zucchini





Summer is a popular time for lots of zucchini! One of the many ways to prepare zucchini is to batter and fry them! Enjoy this recipe!
2 zucchini, quartered and sliced
1 onion sliced
1/2 cup flour
1/2 cup bread crumbs or panko
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon pepper
1 cup vegetable oil for frying

Directions

Place zucchini and onions in a medium bowl and mix together.
In a small bowl mix flour, bread crumbs/panko, salt, pepper and garlic powder.
Pour dry mixture over zucchini/onion mixture, cover bowl and shake well. Let mixture sit for about 30 minutes; a batter will form on the vegetables.
In a medium skillet heat oil over medium heat. When oil is hot add breaded vegetables and fry, turning to brown evenly.

Canning Bread and Butter Pickles



Original recipe makes 8 - 1 quart jarsChange Servings

25 cucumbers, thinly sliced

6 onions, thinly sliced

2 green bell peppers, diced
3 cloves garlic, chopped
1/2 cup salt

4 chopped jalapeños
8 slices of pineapple chunked

3 cups cider vinegar
5 cups white sugar
2 tablespoons mustard seed
1 1/2 teaspoons celery seed
1/2 teaspoon whole cloves
1 tablespoon ground turmeric

Directions

In a large bowl, mix together cucumbers, onions, green bell peppers, garlic and salt. Allow to stand approximately 3 hours.
In a large saucepan, mix the cider vinegar, white sugar, mustard seed, celery seed, whole cloves and turmeric. Bring to a boil.
Drain liquid from the cucumber mixture. Stir the mixture into the boiling vinegar mixture. Remove from heat shortly before the combined mixtures return to boil.
Transfer to sterile containers. Seal and chill in the refrigerator until serving.

Mexican Queso Dip



Queso Veggie Dip and Chips



Ingredients:

8 corn tortillas cut into triangles

1 1/2 Tbsp. canola oil

1 small onion, minced

2 Tbsp. minced garlic

2 cups fresh mushrooms, diced

1 cup diced tomatoes

1 - 4 oz. can green chilies, or

1/4 cup chopped jalapenos

1/2 cup vegetable broth

1 1/2 cup shredded pepper jack cheese



Salt and Pepper to taste


Instructions:

Preheat oven 425

Toss the tortilla chips with 1 Tbsp of the canola oil, and arrange on a baking

sheet. Bake until lightly brown, about 8 to 10 minutes.


In a cast iron pan, or a saute pan, add the rest of the oil on medium. Add

the onion and garlic and cook for 2 to 3 minutes. Add the tomato and

mushrooms, and cook for another 2 to 3 minutes, until mushroom is softened. Season with S and P. Turn heat to low and add the vegetable broth, the can of chillies, and the

cheese. Stirring constantly to prevent scorching, and to make sure the cheese

melts uniformly. When cheese is fully melted and starts to bubble, remove

from heat and serve with chips.
